🥄 Ingredients (4 servings)

  • 4 bone-in chicken thighs or breasts
  • 4 medium potatoes, peeled and sliced into ½-inch rounds
  • 1 large onion, sliced
  • 2–3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • Salt & black pepper to taste
  • ½ cup chicken broth or water
  • Optional: ½ cup shredded cheese for topping

👩‍🍳 Instructions

1. Prep

  1. Preheat oven to 400°F (200°C).
  2. Grease a baking dish with a little olive oil.

2. Season the chicken

  • Rub chicken with olive oil, paprika, thyme/rosemary, salt, and pepper.

3. Layer the bake

  1. Arrange sliced potatoes and onions in the baking dish.
  2. Sprinkle minced garlic over potatoes.
  3. Place chicken pieces on top of the potato layer.
  4. Pour chicken broth around the edges.

4. Bake

  • Cover with foil and bake 35–40 minutes.
  • Remove foil and bake another 15–20 minutes, until chicken is golden and cooked through (165°F / 74°C internal temp) and potatoes are tender.
  • Optional: sprinkle shredded cheese on top for the last 5 minutes of baking.

💡 Tips

  • Use Yukon Gold potatoes for creamy texture
  • Add vegetables like carrots, bell peppers, or zucchini for extra flavor
  • For crispier chicken skin, broil for 2–3 minutes at the end
