
🥄 Ingredients (4 servings)
- 4 bone-in chicken thighs or breasts
- 4 medium potatoes, peeled and sliced into ½-inch rounds
- 1 large onion, sliced
- 2–3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried thyme or rosemary
- Salt & black pepper to taste
- ½ cup chicken broth or water
- Optional: ½ cup shredded cheese for topping
👩🍳 Instructions
1. Prep
- Preheat oven to 400°F (200°C).
- Grease a baking dish with a little olive oil.
2. Season the chicken
- Rub chicken with olive oil, paprika, thyme/rosemary, salt, and pepper.
3. Layer the bake
- Arrange sliced potatoes and onions in the baking dish.
- Sprinkle minced garlic over potatoes.
- Place chicken pieces on top of the potato layer.
- Pour chicken broth around the edges.
4. Bake
- Cover with foil and bake 35–40 minutes.
- Remove foil and bake another 15–20 minutes, until chicken is golden and cooked through (165°F / 74°C internal temp) and potatoes are tender.
- Optional: sprinkle shredded cheese on top for the last 5 minutes of baking.

- Use Yukon Gold potatoes for creamy texture
- Add vegetables like carrots, bell peppers, or zucchini for extra flavor
- For crispier chicken skin, broil for 2–3 minutes at the end
